Toum: preparation

The mixer is used to prepare three elements of the Teta kitchen: chopped garlic for Battata Harra, Tarator sauce and Toum: Garlic Sauce. This sauce is used mainly for Shish Taouk but also served with some mar´ouks.

Always be sure that the pot is fixed in the right position and the blade is in there before putting in anything, otherwise you will have to empty the pot, put the blade in and refill it again.

Always be sure the cover is installed correctly, as in the photo. Once all of this is done, you can start the mixer.

To start the mixer, press the green button. The red button will stop the mixer. The wheel will control the speed of the blade.

Note that if any of the mentioned parts is missing or not installed correctly, the mixer will not start.



- 50 cloves of garlic

- 1 ltr of sunflower oil

- 1 tblspoon of salt

- 250 ml. lemon juice

On weekends/holidays, double the recipe

- Before starting, make a cross in the oil bottle using a knife to pour the oil slowly and continuously into the top of the mixer while making the sauce.

- Add the garlic with a very small amount of oil and start mixing. The mixing speed is not very important but it should be around 12.

- Start adding the oil from the top slowly and continuously. As you are adding the oil, you will see a mousse hitting the walls of the pot.

- When you pour about the half of the oil quantity, stop the machine, add the salt and then continue.

- Once the oil quantity is added, continue mixing and add the lemon juice all at once.

- Continue mixing for 2 minutes and then stop the machine.

Transfer the garlic sauce to a GN container and keep it in the fridge for later
