To prepare Arayes, separate a bread into two parts keeping a small joint between them.
Check the outside of the bread: which one is the red part?
Spread some Kafta on the inside of the red part of the bread.
Add a pinch of coriander and onion slices on the Kafta. Then add some Tahine and close the bread.
When a guest orders Arayess, put the Arayess on the electrical heater for 1 minute.
Cut the Arayess into 4 pieces and put them in a line on a plate. Add a lemon slice and keep it under the red light until the server picks it up.
It is always possible to prepare some raw Arayess in the fridge on busy days. Heat the Arayes to order and serve as described.
